Our winemaking story
Piližota Winery is the heir to a longstanding family tradition of viticulture and wine production, deeply rooted in the Dalmatian way of life - where the struggle for survival and the desire for progress intertwine with a passion for crafting noble wines.
The Šibenik wine region has long been known for its viticulture and we carry on this legacy through the production of premium indigenous red wines - Babić and Plavina.
Since the restoration of our family winery in 2002, our goal has been to unite traditional and modern approaches to winemaking.
This includes cultivating vines without pesticides, maintaining low grape yields per vine, hand-harvesting, fast grape processing, fermenting and aging wines in a modern wine cellar.
After establishing a strong presence in Croatia, a major challenge was introducing our wines to the USA.
Thanks to persistence and hard work, we succeeded and since 2010, we have been the first producers of indigenous Croatian Babić and Plavina wines for the US market. Today, we distribute most of our wines there, to one of the most important global markets.

Babic Pilizota
Babić grapes have been grown for centuries in Croatia, especially in the wine – growing areas
of picturesque towns Šibenik and Primošten. In a special microclimate of the karst coast of
the Adriatic sea, hand selection and traditional production of Babić offers fresh harmonious
wine with strong character, dark ruby red colour, smooth tannins and pleasant berry fruit
flavour with light herb hints. This wine is our contribution and the most sincere way to
express the essence of our Dalmatian land and Mediterranean heritage.

In Croatia, exceptional occasions require exclusive wines. Babić reserve is produced from
grapes from top quality wine-growing areas around Šibenik, a historical town on the Adriatic
coast of Croatia. This is a warm and harmonious wine with strong character, dark ruby red
colour, ripe tannins and intensive flavours of the berry fruits. Exclusive Babić has always
been a great dark variety reflecting the spirits of Dalmatian vineyards and our family proudly
recommends this famous authentic wine of our region.

Plavina Reserve Piližota
The best wines of the Plavina sort are the confirmation of perseverance and hardwork of the
Šibenik winegrowers. The grapes are cultivated in traditional vineyards with fewer grapes per
vine. However, they are handpicked and this type of work gives cleaner, heartier and more
elegant wine of dark ruby red colour, ripe tannins and a harmonious berry aromas. Plavina
Reserve is our family’s genuine contribution to the old tradition and we proudly offer our
wine as the best that this precious indigenous sort can give.

Plavina is the most common red wine variety in the wine-growing area around Šibenik which
deserves its place among the top quality wines due to its specific characteristics. This is a
fresh, warm, harmonious and elegant wine with ruby red colour, smooth tannin and pleasant

Syrah Pilizota
Lately, world known grapevines have been cultivated in Dalmatia and one of the best is
Syrah. Its cultivation has become a big challenge, but the desire to achieve the same quality as
other well-known wines, led our family to new creations. Our Syrah is a combination of
indigenous Dalmatian sorts Plavina and Babić, which results in a new, authentic wine of dark
ruby colour and a purple hue, with fresh and harmonious aroma and soft tannins with
harmonious berry aromas.

Syrah Reserve Piližota
Making wine that reflects the best characteristics of Syrah grapes, enriched with best Plavina
and Babić grapes growing on precious North Dalmatian lands, drove our family to create the
prestigious Syrah Reserve. With combining world known cultivars and renowned indigenous
sorts, we created a new, authentic, full-bodied wine of dark ruby pomegranate colour and a
purple hue, harmonious ripe tannins and refined dark berry aromas.

Merlot Pilizota
Lately, world known grapevines have been cultivated in Dalmatia and one of the best is
Merlot. Its cultivation has become a big challenge, but the desire to achieve the same quality
as other well-known wines, led our family to new creations. Our Merlot is a combination of
indigenous Dalmatian sorts Plavina and Babić, which results in a new, authentic, harmonious
and full-body wine of dark ruby red colour and soft tannins with harmonious berry aromas.
