Babić Reserve represents the pinnacle of the Babić variety and our winery’s dedication to traditional viticulture and winemaking. This premium Croatian wine is made from carefully selected grapes sourced from the best vineyard sites around Šibenik, where the Dalmatian terroir gives the wine strength, depth and character. The harvest is done by hand, followed by a classic fermentation lasting 7-10 days in open stainless steel tanks. The young wine is aged in stainless steel tanks until the first racking, after which it matures for 12-18 months in 225-liter French oak barrels. Once optimal maturity is achieved, the wine is bottled in 0.75 L bottles.
DESCRIPTION
Babić Reserve Piližota - Šibenik is distinguished by its intense, dark ruby-garnet colour and complex aromatic profile. On the nose, it reveals notes of ripe dark fruit, dried plums, and black cherries, complemented by subtle spicy and mineral nuances characteristic of Dalmatian rocky soils. The aroma highlights notes of ripe dark fruit, prunes, black cherries, with discreet spicy and mineral nuances characteristic of Dalmatian stony soils. On the palate, the wine is full-bodied, powerful and elegant, with a pronounced structure and mature tannins that give it seriousness and a long finish. This indigenous wine carries the Protected Designation of Origin (PDO), confirming its origin and premium quality. As a selected reserve, Babić Reserve is produced in limited quantities, with a special focus on grape ripeness, concentration, and long aging potential.
SERVING
Serve at room temperature or slightly chilled, for special occasions alongside top-quality beef steaks, wild boar and rabbit in hunter-style sauce, prosciutto, aged cheeses, large oily fish, and dark chocolate desserts.
