VINIFICATION
Plavina Reserve is produced through the selection of the finest grapes from vineyards around Šibenik, where the Dalmatian terroir allows for the full expression of the variety while preserving both strength and elegance. The grapes are hand-harvested from vines aged 30-50 years, with low yields. Fermentation is traditional, lasting 7-10 days in open stainless steel tanks. The young wine is aged in stainless steel tanks until the first racking, after which it matures for 12-18 months in 225-liter French oak barrels. Once optimal maturity is achieved, the wine is bottled in 0.75 L bottles.
DESCRIPTION
Plavina Reserve Piližota represents a selected interpretation of the Plavina variety and the pinnacle of our winery’s work with this traditional grape from the Šibenik region. The wine is distinguished by its dark ruby color and rich aromatic profile. On the nose, it reveals notes of ripe red and dark fruit, dried sour cherries, subtle spicy nuances, and discreet mineral tones reflecting the rocky Dalmatian soils. On the palate, it is full-bodied, rounded, and elegant, with soft tannins and a long, smooth finish. The wine carries the Protected Designation of Origin (PDO), confirming its origin and premium quality. Unlike the classic Plavina, Plavina Reserve is produced in limited quantities, with an emphasis on strength, concentration and complexity.
SERVING
Serve at room temperature or slightly chilled. It pairs excellently with red meat dishes, prosciutto, aged cheeses and large oily fish.
