VINIFICATION
Babić grapes are grown in vineyards around Šibenik, in the heart of Dalmatia, where the terroir gives the wine its distinctive structure and character. The vines are cultivated on rocky Dalmatian soils with low yields per vine. Harvesting is done by hand, followed by a classic fermentation lasting 7–10 days in open stainless steel tanks. The young wine is aged in stainless steel tanks until the first racking, after which it matures for 6 months in 225-liter French oak barrels. Once optimal maturity is reached, the wine is bottled in 0.75 L bottles.
