VINIFICATION
The grapes for Babić wine are hand-harvested in vineyards around Šibenik, on rocky soils under the strong influence of the Adriatic Sea and the Mediterranean climate. These conditions enable the production of a wine with a pronounced varietal character, structure and a distinctive Dalmatian signature. Fermentation for our Babić is traditional, lasting 7-10 days in open stainless steel tanks. The young wine is aged in stainless steel tanks until the first racking, after which it matures for 6 months in 225-liter French oak barrels. Once optimal maturity is reached, it is bottled in 0.75 L bottles.
DESCRIPTION
This is an indigenous Croatian wine, deeply rooted in the winemaking tradition of Šibenik. It is produced with special care for the vineyard, the grapes and the natural balance of the wine. Babić Piližota - a deep ruby red colour and expressive aromas of ripe dark fruit with subtle spicy notes characterize Dalmatia. On the palate, it is full-bodied, well-balanced, with soft, pleasant tannins and a freshness that makes it exceptionally drinkable. The wine carries a Protected Designation of Origin (PDO), the highest level of protection guaranteeing its origin, quality, variety and authenticity.
SERVING
Serve at room temperature or slightly chilled. It is an ideal choice with roast veal and lamb, venison in sauce with gnocchi or polenta, meat risotto, hard cheeses, dry sausages, cured ham, Bolognese pasta and oily fish.
