Die Trauben werden von Hand gelesen, bei niedrigen Ertr\u00e4gen von 30-50 Jahre alten Rebst\u00f6cken, mit strenger Selektion im Weinberg und im Keller. Die Fermentation erfolgt klassisch, 7-10 Tage in offenen Edelstahltanks. Der Jungwein reift bis zum ersten Abstich in Edelstahltanks und anschlie\u00dfend 12-18 Monate in franz\u00f6sischen Eichenf\u00e4ssern mit einem Volumen von 225 Litern. Am Gaumen ist er vollmundig, kraftvoll und strukturiert, mit ausgepr\u00e4gten reifen Tanninen und einem langen, eleganten Abgang.
